As far as fantasy series are concerned, nothing surpasses the "Wheel of Time" series by Robert Jordan. It takes a while to finish even one of the books let alone the whole series, but it's definitely worth it. The story is so epic in proportion, it makes "Lord of the Rings" look like "Cat in the Hat".
